Try this Gluten & Dairy Free Banana Loaf Recipe
Try this recipe for an amazing banana loaf that's completely free of gluten and dairy (you'd never know!!). Simple for everyone to follow, whether you're an amateur or pro. Perfect as an autumn dessert or with a lovely cup of tea or coffee!
You'll need the following ingredients and equipment:
- 2 bananas (ripe)
- 6 oz gluten free self raising flour
- 6 oz caster sugar
- 6 oz dairy free sunflower spread
- 3 eggs
- 4 oz sultanas
- 1 tsp mixed spice
- 1/4 tsp xantham gum
- Loaf tin
- Loaf liner
You'll also need the following for the topping (optional):
- 1 banana
- 2 oz caster sugar
- Knob of dairy free sunflower spread
- 2 tbsp water
Cooking instructions:
- Pre-heat oven to 170c (150c for fan ovens)
- Mix the caster sugar & sunflower spread in a mixer or bowl until light & fluffy
- Whisk the eggs in a separate cup or bowl
- Add the whisked eggs to the creamed sugar/sunflower spread
- Mix this together slowly to ensure the mixture doesn't split (separate)
- Once fully mixed, fold in the flour, mixed spice & xantham gum
- Mash the bananas
- Mix in the mashed bananas and sultanas
- Line the tin with the loaf liner
- Pour the mixture into the tin and give the tin a small tap (to release any air bubbles)
- Put the tin into the pre-heated oven on the middle shelf and bake for 55-60 minutes until cooked (until a knife or skewer comes out clean)
- Once cooked, remove the tin from the oven and place on a wire cooling rack
- Whilst the loaf is cooling, slice the banana for the topping
- Add the caster sugar and water for the topping to a non-stick pan
- Heat the pan until the sugar and water have turned golden and formed a caramel
- Add the sliced banana to the pan and coat it with the caramel
- Add the knob of sunflower spread to the pan and cook for 1-2 minutes until it's completely melted and absorbed into the caramel
- Place the caramelised banana slices onto the loaf
- Serve and enjoy!!
